Quatre quarts, the name of this cake says it all. It means four quarters, as in four ingredients. That’s all it takes, it’s the easiest cake to prepare: flower, sugar, butter, eggs. The same quantity for each ingredient is used to make this light and airy cake, originally from the region of Brittany. You can of course personalize your recipe with apples, or in this case berries.
150 grams of flour
150 grams of sugar
150 grams of butter (melted)
1 pack of baking powder
200 grams of berry mix (frozen or fresh)Mix the sugar and egg.
Slowly add the melted butter.
Add in the flour and baking powder that have been mixed together beforehand.
Pour half the mix in a buttered 28cm cake pan. Add in the berries. Pour the remaining cake mix over the fruit.
Bake on 170° for 40-45 minutes or until you can stick a knife in the cake and it comes out clean.
